Ingredients

1.Krayon Occasion Basmati Rice – 100g (1/2 cup, washed)

2.Full Cream Milk – 800ml (3 1/4 cups)

3.Sugar – 75g (1/3 cup)

4.Ghee – 15g (1 tbsp)

5.Cardamom Powder – 2g (1/2 tsp)

6.Chopped Almonds – 15g (1 tbsp)

7.Chopped Cashews – 15g (1 tbsp)

8.Saffron Strands – 3-4 (soaked in warm milk)

9.Raisins – 15g (1 tbsp)

Instructions

  • 1. Wash and Soak the Rice:Wash 100g of Krayon Occasion Basmati Rice thoroughly to remove any excess starch.Soak the rice in water for about 15-20 minutes. This step helps the rice cook evenly and become soft and creamy when preparing the kheer.
  • 2. Prepare the Milk:In a large heavy-bottomed pan, add 800ml of full cream milk. Bring it to a gentle boil over medium heat. Once it starts to boil, reduce the heat to low to simmer the milk, stirring occasionally to avoid burning.Simmer the milk for about 5 minutes to reduce slightly and intensify its flavor.
  • 3. Cook the Rice:In the same pan, add the soaked rice to the boiling milk and cook for 20-25 minutes, stirring occasionally to prevent the rice from sticking to the bottom.The rice will absorb the milk and cook through, becoming soft and creamy. Keep the heat low and stir regularly to ensure the mixture doesn’t overflow or burn.
  • 4. Add Sugar and Spices:Once the rice is cooked and the milk has thickened, add 75g of sugar and 2g of cardamom powder. Stir to dissolve the sugar completely. Allow it to simmer for another 5-7 minutes for the flavors to blend.
  • 5. Add Nuts and Raisins:Add the chopped almonds, chopped cashews, and raisins to the pan. Stir everything together. These ingredients will add richness and texture to your kheer.
  • 6. Garnish with Saffron:Add the soaked saffron strands and mix gently. The saffron will infuse a beautiful aroma and golden color to the kheer.
  • 7. Serve and Enjoy:Once the kheer reaches your desired consistency, remove it from the heat. Let it cool for a few minutes, and then serve it warm or chilled. You can garnish with additional nuts or saffron if desired.
